2023 STUDENT WORK - FOR FUN!
Every day, we cook with bone, chicken, and beef broth. And yet, we let our pasta water go down the drain. Why is the starch-rich pasta water not appreciated like a good broth? After talking to a chef or two who didn’t think it was ridiculous, I decided to bring this idea to life. Why you may ask? If you didn’t know, pasta water has many uses, including a base for stews, loosening thick sauce, watering plants, and according to Food & Wine Mag, an ingredient to a very dirty martini.
